Ingredients
- 1 kg chicken wings (cleaned and patted dry)
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tsp garlic powder
- 0.5 cup cornstarch (for breading)
- 0.5 cup all-purpose flour (for breading)
- cooking oil (for deep frying)
- 2 tbsp butter (for Buffalo sauce)
- 0.25 cup hot sauce (for Buffalo sauce)
- 1 tbsp honey (for Buffalo sauce)
- 2 tbsp butter (for Garlic Parmesan sauce)
- 3 garlic (minced, for Garlic Parmesan sauce)
- 0.25 cup parmesan cheese (grated, for Garlic Parmesan sauce)
- 3 tbsp soy sauce (for Soy Garlic sauce)
- 2 tbsp brown sugar (for Soy Garlic sauce)
- 2 garlic (minced, for Soy Garlic sauce)
- 3 tbsp salted egg powder (for Salted Egg sauce)
- 1 tbsp butter (for Salted Egg sauce)
- 5 curry leaves (optional, for Salted Egg sauce)
Steps
- 1
In a large bowl, season the chicken wings with salt, black pepper, and garlic powder. Toss well to ensure even coating.
- 2
Combine the cornstarch and all-purpose flour in a shallow dish. Dredge each seasoned wing in the flour mixture, shaking off any excess.
- 3
Heat cooking oil in a deep pan or deep fryer to 350°F (175°C). Deep fry the wings in batches for 8-10 minutes until golden brown and crispy. Drain on a wire rack or paper towels.
- 4
For Buffalo Sauce: Melt butter in a small pan over low heat. Stir in the hot sauce and honey until well combined and slightly thickened.
- 5
For Garlic Parmesan Sauce: Melt butter in a pan and sauté minced garlic until fragrant but not browned. Remove from heat and stir in the grated parmesan cheese.
- 6
For Soy Garlic Sauce: In a small saucepan, combine soy sauce, brown sugar, and minced garlic. Simmer over low heat until the sugar dissolves and the sauce thickens slightly.
- 7
For Salted Egg Sauce: Melt butter in a pan. If using, add curry leaves and sauté until fragrant. Stir in the salted egg powder until it starts to foam.
- 8
Divide the fried wings into four portions and toss each portion in one of the prepared sauces until fully coated. Serve immediately.
Notes
For extra crispy wings, you can double-fry them: fry once at a lower temperature to cook through, then a second time at a higher temperature for 1-2 minutes to achieve maximum crunch.
