Ingredients

  • 1.5 cup Long-grain white rice (Uncooked)
  • 2.5 cup Chicken stock
  • 2 Chicken thigh fillets (Diced; approximately 280 g edible meat total)
  • 200 g Edamame beans
  • 2 Spring onions (Sliced)
  • 2 tbsp Korean BBQ seasoning (Mingle seasoning recommended by the source)
  • 2 tbsp Soy sauce
  • 2 tbsp Mirin
  • 3 Eggs
  • Spring onions (Extra, for serving)
  • Everything bagel seasoning (For serving)
  • Mayonnaise (For serving; drizzle to taste)
  • Chilli oil (For serving; drizzle to taste)

Steps

    Preheat the oven to 200°C fan-forced (about 220°C conventional). Dice the chicken thighs and slice the spring onions. Measure the rice, stock, edamame, seasonings, soy sauce, and mirin so everything is ready to add to the baking dish.

    Place the diced chicken in a large ovenproof baking dish. Add the soy sauce, mirin, and Korean BBQ seasoning, then stir so the chicken is coated.

    Add the chicken stock, uncooked rice, edamame beans, and sliced spring onions to the dish. Stir thoroughly to distribute the rice, chicken, vegetables, and liquid evenly.

    Cover the baking dish tightly with foil, ensuring the edges are sealed so steam cannot escape. Bake for 30–40 minutes, until the rice is tender and most of the stock has been absorbed and the chicken is cooked through.

    Remove the foil carefully, watching for escaping steam. Stir the rice mixture to redistribute the chicken and edamame.

    Use the back of a spoon to make three small wells in the rice mixture. Crack one egg into each well.

    Return the dish to the oven uncovered and bake for a further 8–10 minutes, or until the eggs are set to your preferred doneness.

    Fluff the rice with a fork. Break the baked eggs into small pieces and stir them through the rice so they are evenly distributed.

    Serve hot, topped with extra sliced spring onion and everything bagel seasoning. Finish with a drizzle of mayonnaise and chilli oil.
