Ingredients

  • 1 cabbage (Use one cabbage; the source says to double the marinade if roasting both halves.)
  • 40 g itsu miracle’miso (For the miso marinade.)
  • 2 tbsp butter (For the miso marinade.)
  • 2 tbsp honey (For the miso marinade.)
  • 0.333 cup tahini (For the sesame dressing.)
  • 1 tbsp itsu miracle’miso (For the sesame dressing.)
  • 1 tbsp honey (For the sesame dressing.)
  • 2 tsp rice vinegar (For the sesame dressing.)
  • 1 tsp soy sauce (For the sesame dressing.)
  • water (Add enough to thin the sesame dressing.)
  • salt (For the boiling water; quantity unspecified.)
  • furikake (For topping; the source offers sesame as an alternative.)
  • sesame seeds (Alternative topping to furikake.)

Steps

  1. 1

Slice the cabbage crosswise in half.

  2. 2

Bring salted water to a boil, then place the cabbage halves face down in the water. Boil for 20 minutes, or until tender.

  3. 3

Drain the cabbage and pat it dry. Let it cool slightly, then flatten it and open the leaves up.

  4. 4

Make the miso marinade by combining the 40 g miso, butter, and honey.

  5. 5

Brush the miso marinade over the cabbage, working it into all the crevices.

  6. 6

    Preheat the oven to 200°C.

  7. 7

Bake the cabbage for 25 minutes, basting it with miso sauce halfway through.

  8. 8

Broil for a final 10 minutes for extra char.

  9. 9

Whisk together the tahini, dressing miso, honey, rice vinegar, and soy sauce. Add water as needed to thin the dressing.

  10. 10

Top with the sesame dressing and furikake or sesame seeds, then serve.

Notes

The source says to double the marinade if roasting both cabbage halves. It does not specify how to form or arrange the cabbage into individual flower shapes. The source writes “mid sesame sauce,” interpreted as “miso sesame sauce.”
