Ingredients

  • 4 tbsp Tahini
  • 2 tbsp Crispy chilli oil (Or to taste.)
  • 1 tbsp Maple syrup (Alternatively, use 1 tsp sugar.)
  • 2 tbsp Rice vinegar
  • 3 tbsp Light soy sauce
  • Chicken (Chopped or shredded; leftover roasted or fried chicken works.)
  • Cucumber (Chopped.)
  • Edamame beans
  • Fresh coriander (Chopped.)
  • Ice-cold water (Add 1–2 tbsp if the sauce is too thick.)
  • Garlic (Optional; grated.)
  • Ginger (Optional; grated.)
  • Sichuan pepper (Optional; amount not specified.)

Steps

  1. 1

In a bowl, mix the tahini, crispy chilli oil, maple syrup and rice vinegar with the light soy sauce to make the sauce.

  2. 2

Taste the sauce and adjust it to suit the chilli oil's heat and flavor. If it is too thick, stir in 1–2 tablespoons of ice-cold water. If desired, add grated garlic, grated ginger or Sichuan pepper.

  3. 3

Add the chopped or shredded chicken, chopped cucumber, edamame beans and fresh coriander to the same bowl. Toss thoroughly until everything is coated in sauce.

  4. 4

Serve as is, or serve with cold noodles or rice.

Notes

The source does not specify quantities for the chicken, cucumber, edamame or coriander; serving estimate is approximate. The suggested noodles or rice are optional serving accompaniments and have no quantities provided. The author says the sauce can be tripled and kept in the fridge for the week but gives no storage duration beyond that.
