Ingredients
- 1 cup Jasmine rice
- 9.5 cups Water
- 8 Chicken drumsticks (Large)
- 2 in Fresh ginger (Finely grated)
- 3 cups Mushrooms (Sliced; optional)
- 4 tsp Sea salt (Add to taste; adjust if necessary)
- Toasted sesame oil (Must-have topping; author suggests 1 tsp per bowl)
- Lemon or lime juice (Must-have topping; author suggests 1 tsp per bowl)
- 1 tsp Soy sauce (Must-have topping; author suggests 1 tsp per bowl)
- Green onions (Optional topping)
- Soft-boiled eggs (Optional topping)
- Roasted peanuts (Optional topping)
- Cilantro (Optional topping)
Steps
- 1
For the Instant Pot method, add the rice, water, drumsticks, ginger, and optional mushrooms to a large 8-quart Instant Pot. Hold back the salt and all toppings.
- 2
Pressure-cook on high for 30 minutes.
- 3
Allow the pressure to release naturally for 30 minutes, then release any remaining pressure manually.
- 4
Using tongs, remove the drumsticks. Discard the skin and bones, return the meat to the Instant Pot, and stir it into the congee.
- 5
Add the sea salt and adjust the seasoning to taste.
- 6
Serve in bowls with toasted sesame oil, lemon or lime juice, and soy sauce. The author suggests 1 teaspoon of each per bowl. Add optional green onions, soft-boiled eggs, roasted peanuts, or cilantro if desired.
- 7
For the stovetop method, rinse the rice well and add it to a large pot.
- 8
Add the drumsticks, ginger, and optional mushrooms to the pot, then add the water.
- 9
Bring the pot to a boil.
- 10
Reduce the heat to a medium simmer and cook uncovered for approximately 30 minutes. Stir occasionally to prevent sticking; the congee should become thick and creamy.
- 11
Remove the drumsticks. Discard the skin and bones, return the meat to the pot, and stir it in.
- 12
Add the sea salt and adjust the seasoning to taste.
- 13
Serve with the must-have toppings and any optional toppings you like. The author suggests 1 teaspoon of each liquid topping per medium-sized bowl.
Notes
The source provides two methods. The stovetop method specifies approximately 30 minutes of cooking; the Instant Pot method specifies 30 minutes at pressure plus a 30-minute natural release, with additional time for releasing pressure. Topping quantities other than the suggested teaspoon per bowl are not specified.
