Ingredients

  • 1 cup Jasmine rice (Rinse well for the stovetop method)
  • 9.5 cups Water
  • 8 Large chicken drumsticks (Skin and bones discarded after cooking)
  • 1 Fresh ginger (2-inch piece, finely grated)
  • 3 cups Mushrooms (Sliced; optional)
  • 4 tsp Sea salt (Add after cooking; adjust to taste if needed)
  • Toasted sesame oil (Required topping; author suggests 1 tsp per bowl)
  • Lemon or lime juice (Required topping; author suggests 1 tsp per bowl)
  • 1 tsp Soy sauce (Required topping; author suggests 1 tsp per bowl)
  • Green onions (Optional topping)
  • Soft-boiled eggs (Optional topping)
  • Roasted peanuts (Optional topping)
  • Cilantro (Optional topping)

Steps

  1. 1

For the Instant Pot method, put the rice, water, chicken drumsticks, grated ginger, and optional sliced mushrooms into a large 8-quart Instant Pot. Leave out the salt and all toppings.

  2. 2

Pressure-cook on high for 30 minutes.

  3. 3

Allow the pressure to release naturally for 30 minutes, then release the remaining pressure manually.

  4. 4

Use tongs to remove the drumsticks. Discard the skin and bones, return the meat to the pot, and stir it into the congee.

  5. 5

Add the sea salt and adjust the seasoning to taste if needed.

  6. 6

Ladle into bowls and add toppings. The author suggests 1 teaspoon each of sesame oil, soy sauce, and lime juice per bowl; add optional toppings as desired.

  7. 7

For the stovetop method, rinse the rice well and place it in a large pot.

  8. 8

Add the chicken drumsticks, grated ginger, and optional sliced mushrooms to the pot.

  9. 9

Add the water and bring the pot to a boil.

  10. 10

Reduce the heat to a medium simmer and cook uncovered for approximately 30 minutes, stirring occasionally to prevent sticking, until the soup is thick and creamy.

  11. 11

Remove the drumsticks. Discard the skin and bones, then return the meat to the pot.

  12. 12

Add the sea salt and adjust to taste if needed.

  13. 13

Serve with the required toppings and any optional toppings you like. The author suggests 1 teaspoon of the liquid toppings per medium-sized bowl.

Notes

The source provides two cooking methods. For stovetop, it specifies approximately 30 minutes of simmering; the Instant Pot method specifies 30 minutes at high pressure plus a 30-minute natural release. The source does not specify topping amounts except its suggestion of 1 teaspoon per bowl for the liquid toppings.
