Ingredients
- 2 blocks extra-firm tofu (each block; sliced lengthwise 1-inch-thick)
- 2 tbsp brown sugar (light or dark)
- 2 tbsp white miso paste
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp vegetable oil
- 0.25 tsp ground cayenne
Steps
- 1
Arrange the tofu slices on a clean kitchen towel or paper towels. Cover with another towel, set a flat cutting board or sheet pan on top, and weigh it down with a few cans or a skillet. Let the tofu drain for 15 to 45 minutes.
- 2
In a large bowl, stir together the brown sugar, miso, soy sauce, rice vinegar, vegetable oil and cayenne until the marinade is smooth.
- 3
Tear the drained tofu into bite-size pieces, about 1 inch each, and add them to the marinade. Stir gently to coat. Cook right away, or cover and refrigerate to marinate for up to 24 hours.
- 4
When ready to cook, position an oven rack about 6 inches from the broiler and heat the broiler to high. Line a sheet pan with aluminum foil.
- 5
Remove the tofu from the marinade and arrange it on the prepared sheet pan. Reserve the marinade.
- 6
Broil for 10 to 15 minutes total, flipping the tofu occasionally with a spatula, until browned and crisp. Check periodically and rotate the pan and tofu as needed to account for broiler hot spots.
- 7
Drizzle the tofu with the reserved marinade before serving.
Notes
The source suggests serving with steamed rice and a green vegetable, or over salad greens. For a salad, it recommends making a double batch of marinade to dress the lettuces. Broil green beans or asparagus for 5 to 8 minutes if serving them alongside. The source gives a 15–45 minute draining range and an optional marinating period of up to 24 hours.
