Ingredients
- 0.5 cup sugar
- 1 cup miso (Preferably dark.)
- 0.5 cup mirin, sake, or white wine (Use one of the listed options.)
- 1.75 lb black cod fillets (Source quantity is 1½ to 2 pounds; skin may be on or off.)
Steps
- 1
Heat the broiler and set the oven rack 3 to 4 inches from the heat source.
- 2
Combine the sugar, miso, and chosen liquid (mirin, sake, or white wine) in a small saucepan. Set it over low heat and stir occasionally until blended; bring it almost to a boil. The sauce will be fairly thin. Turn off the heat.
- 3
Place the black cod fillets in an ovenproof baking dish or skillet, preferably nonstick. Spoon half of the sauce over the fish.
- 4
Broil until the sauce bubbles and begins to brown.
- 5
Spoon the remaining sauce over the fish. Continue broiling until the fish is just cooked through, adjusting the heat or rack position if the sauce or fish is browning too quickly.
- 6
Serve immediately.
Notes
The source gives an approximate broiling distance but no specific broiling duration or temperature; doneness is described as just cooked through. The article notes that no long marination is necessary.
