Ingredients

  • 50 g self-rising flour (self-rising flour; can add 12g extra if omitting protein powder)
  • 2 tl baking powder (baking powder; essential for texture even with self-rising flour)
  • 12 g vanilla protein powder (vanilla protein powder; can be replaced with 12g extra self-rising flour)
  • 90 g unsweetened applesauce (unsweetened applesauce)
  • 35 g sugar substitute (sugar substitute)
  • 1 egg (size S)
  • 2 tl cinnamon (cinnamon)
  • 40 g powdered sugar substitute (powdered sugar substitute for frosting)
  • 1.5 el skim milk (skim milk for frosting)
  • 0.5 tl cinnamon (cinnamon for frosting, plus extra for garnish)

Steps

    Preheat your convection oven to 170°C (340°F).

    In a small food processor, combine the egg, applesauce, sugar substitute, and 2 teaspoons of cinnamon.

    Bake in the preheated oven for 25 to 30 minutes. Perform a 'skewer test' — the cake is done when a wooden skewer inserted into the center comes out clean.

Notes
