Ingredients
- 400 g chicken breast (diced)
- 300 g sweet potato (cut into small cubes)
- 150 g broccoli
- 2 spring onion whites (sliced)
- 2 tbsp honey
- 3 tbsp soy sauce
- 5 cloves garlic (minced)
- 1 ginger (thumb-size piece, minced)
- 150 ml chicken bone broth (or water and 1 stock cube; use 100 ml with the sweet potato and the remaining 50 ml with the broccoli)
- 1 tsp chilli flakes
- 0.5 tsp cornflour
- salt (big pinch)
- black pepper (big pinch)
- 2 spring onion greens (sliced; for garnish)
- 1 tbsp crispy onions (for garnish)
- 1 tbsp sesame seeds (for garnish)
- 1 tbsp coriander (chopped; for garnish)
Steps
- 1
Add the cubed sweet potato to a pan. Pour in 100 ml of the chicken bone broth (or prepared stock) and season with the salt and pepper.
- 2
Cover the pan and simmer over medium-low heat for 8 minutes.
- 3
Remove the lid, add the diced chicken, and stir-fry for 4 minutes, until the chicken is sealed on the outside.
- 4
Add the minced garlic and ginger, sliced spring onion whites, and chilli flakes. Stir to combine.
- 5
Make a well in the centre of the pan. Add the soy sauce and honey, then the cornflour. Mix the sauce in the well until the cornflour dissolves, then stir it through the pan.
- 6
Add the broccoli and the remaining 50 ml of broth or prepared stock. Cover the pan and simmer for 5 minutes.
- 7
Remove the lid and stir. Continue simmering, if needed, until the sauce reaches your desired consistency.
- 8
Garnish with the sliced spring onion greens, crispy onions, sesame seeds, and chopped coriander, then serve.
