One Pan Diavola Pizza Tatin
A devilishly spicy and quick 'upside-down' pizza made in a single pan using puff pastry, spicy cured meats, and hot honey.

Ingredients
- 100 g Spicy Cured Meats (Spicy Pepperoni and Spicy Chorizo recommended)
- 9 Sundried Tomato Wedges (8-10 wedges)
- 45 g Grated Cheddar (40-50g)
- 0.25 Fresh Mozzarella Ball (torn into little chunks)
- Chilli Flakes (amount dependent on your tolerance)
- Salt (good pinch)
- Black Pepper (good pinch)
- 3 tbsp Pizza Sauce (a few tbsp's; Mutti brand recommended)
- 1 bunch Fresh Basil (small bunch)
- 1 sheet Pre Rolled Puff Pastry
- Grated Parmesan (for garnish)
- Hot Honey (for garnish; Hilltop Honey recommended)
- Basil Leaves (for garnish)
- Red Chilli (sliced, for garnish)

Lay your spicy cured meats (pepperoni and chorizo) into a lightly greased cold pan in a uniform fashion, then turn the heat to medium-low.

Once the meats start sizzling, add your sundried tomato wedges into the small gaps between the meats so they have direct contact with the pan.

Leave the ingredients to sizzle for 2 minutes.

Add the grated cheddar, torn mozzarella chunks, chilli flakes, salt, and black pepper over the meats and tomatoes.

Layer on the pizza sauce in dollops; you can attempt to spread it around slightly if desired.

Add the fresh basil leaves on top of the sauce.

Cover the pan with the sheet of puff pastry, tucking the edges down into the pan with a spoon.

Prick the pastry all over with a fork and make a small steam-release hole in the center.

Place the pan in the oven preheated to 180°C (350°F) for 25-30 minutes until the pastry is golden brown.

Carefully flip the tatin out onto a plate so the pastry is on the bottom and the toppings are on top.

Garnish with grated Parmesan, a drizzle of hot honey, fresh basil leaves, and sliced red chillies.
Notes
This is a very quick meal designed to impress. Ensure the pan you use is oven-safe. The name 'Diavola' refers to the spicy nature of the ingredients.
