Steps

  1. 1

Place the diced chorizo in a cold pan. Turn the heat to medium and cook for a few minutes, until the chorizo releases its oils.

  2. 2

Add the diced red onion and red pepper. Stir-fry for a few minutes.

  3. 3

Add the minced garlic, smoked paprika, ground cumin, cayenne pepper, ground coriander, salt, and pepper. Stir everything through for 1 minute.

Spoon in the chopped tomatoes and stir to combine.

Add the double cream and stir it through the tomato and chorizo mixture.

  6. 6

Add the dried pasta and stir it through the sauce.

  7. 7

Pour in the chicken stock and stir everything together.

  8. 8

Put the lid on the pan and bring the mixture to a gentle boil. Cook for 5 minutes.

  9. 9

Remove the lid, stir the pasta, and add the frozen prawns on top.

  10. 10

Put the lid back on and cook for another 5 minutes.

  11. 11

Remove the lid and place the Mexicana cheese slices on top of the pasta.

  12. 12

Place the pan under a grill set to maximum heat and cook until the cheese is golden and bubbling.
