One-Pan Creamy and Spicy Tomato Pasta

Ingredients
- 175 g dried pasta
- cherry tomatoes (About 10 tomatoes, left whole or halved if large)
- 0.5 red onion (Diced)
- fresh basil (A handful, for the pasta)
- 1 tbsp dried oregano
- 4 garlic (Cloves, minced)
- 1 tsp chili flakes (For the pasta)
- 0.5 tin chopped tomatoes (Approximately half a standard can)
- 100 ml double cream
- 400 ml chicken bone broth (Alternatively, use vegetable stock made with a stock cube and water)

- black pepper (A big pinch, or to taste)
- Parmesan cheese (Grated, for garnish; use as much as desired)

Prepare the ingredients. Dice half of the red onion, mince the garlic, and gather the pasta, tomatoes, basil, oregano, chili flakes, cream, broth, salt, and pepper. Use a wide, deep skillet or saucepan large enough to hold the pasta and liquid.

Add the dried pasta to the pan. Add the cherry tomatoes, diced red onion, fresh basil, dried oregano, minced garlic, 1 teaspoon of chili flakes, chopped tomatoes, double cream, and 400 ml chicken bone broth. If using vegetable stock, dissolve a stock cube in the water before adding it.

Season with a big pinch of salt and black pepper. Stir gently so the pasta is coated and the ingredients are distributed throughout the liquid.

Cover the pan with a lid and bring the mixture to a gentle simmer over medium heat. Avoid a vigorous boil, which can make the cream separate or cause the pasta to stick.

Simmer with the lid on until the pasta is cooked through, generally about 10–12 minutes depending on the pasta shape. Stir every few minutes, scraping the bottom and separating the pasta so it cooks evenly. Add a small splash of water if the pan becomes dry before the pasta is tender.

Remove the lid and continue simmering until the sauce reaches your desired consistency, stirring frequently. The finished sauce should cling to the pasta and look creamy rather than watery.

Taste and adjust the salt, black pepper, or chili flakes as needed. Remove the pan from the heat and let the pasta stand for a minute so the sauce can thicken slightly.

Divide the pasta between bowls and garnish with grated Parmesan, chopped parsley, fresh basil, and additional chili flakes. Serve immediately.
