Beef and Broccoli Fried Rice

Ingredients
- 250 g beef (thinly sliced)
- 1 tbsp soy sauce (for marinating)
- 1 tsp sesame oil (for marinating)
- 0.25 tsp baking soda (for tenderizing)
- salt (to taste)
- 1 tsp cornstarch (for marinating)
- 2 tbsp vegetable oil (divided)
- 3 garlic (finely minced)
- 0.5 white onion (chopped)
- 1 taza broccoli (cut into small florets)
- 2 tazas cooked rice (preferably day-old)
- 1 tbsp dark soy sauce (for the rice)
- 0.25 tsp white pepper
- 0.5 tsp sugar
- 1 tbsp chili oil (or to taste)
- sesame seeds (for garnish)

In a bowl, marinate the sliced beef with soy sauce, sesame oil, baking soda, a pinch of salt, cornstarch, and a splash of vegetable oil.

Heat a wok or large skillet over high heat with a bit of oil. Stir-fry the beef until it is about 80% cooked, then remove from heat and set aside.

In the same wok, add a bit more oil if necessary and sauté the minced garlic and onion until fragrant.

Add the broccoli florets and stir-fry briefly until they start to soften but remain crunchy.

Incorporate the cooked rice (preferably cold, day-old rice) into the wok.

Season the rice with dark soy sauce, sesame oil, white pepper, sugar, and chili oil.

Stir-fry everything together over high heat for about 2 minutes, mixing constantly so the rice is infused with the flavors.

Return the reserved beef to the wok and give it a final quick stir-fry to integrate everything.

Serve hot and garnish with sesame seeds and a bit more chili oil if desired.
Notes
Using day-old rice is essential so the fried rice doesn't turn out mushy. The baking soda in the marinade helps the beef become extremely tender, a common technique in Chinese restaurants.
