Beef and Broccoli Fried Rice
A quick and delicious take on a takeout classic, combining tender beef, crisp broccoli, and fried rice seasoned with a spicy kick.

Ingredients
- 225 g Beef steak (thinly sliced against the grain)
- 1 tbsp Soy sauce (to marinate the beef)
- 1 tsp Sesame oil (for marinating)
- 0.25 tsp Baking soda (to tenderize the beef)
- 1 tsp Cornstarch (for marinating)
- 2 tbsp Vegetable oil (divided for stir-frying)
- 3 Garlic (finely minced)
- 1 Shallot (chopped)
- 1.5 cup Broccoli (cut into small florets)
- 3 cup Cooked rice (preferably day-old rice (cold))
- 1 tbsp Oyster sauce
- 0.25 tsp White pepper
- 0.5 tsp Sugar
- 1 tbsp Chili oil (Chili Crisp style or similar)
- 2 Green onions (chopped for garnish)
- Sesame seeds (for garnish)

In a medium bowl, combine the sliced beef with the soy sauce, sesame oil, baking soda, and cornstarch. Mix well and let marinate for at least 10 minutes.

Heat one tablespoon of vegetable oil in a wok or large skillet over high heat. Add the marinated beef and stir-fry until cooked to about 80% (browned on the outside but slightly pink on the inside). Remove the beef from the pan and set aside.

In the same pan, add the remaining tablespoon of oil if necessary. Stir in the garlic and chopped shallots, sautéing until fragrant and tender.

Add the broccoli florets to the pan and stir-fry for a couple of minutes until they are tender-crisp and bright green.

Stir the cold cooked rice into the pan, breaking up any clumps with a spatula.

Season the rice by adding the oyster sauce, white pepper, sugar, and chili oil. Mix vigorously over high heat for about 2 minutes so the rice toasts slightly and absorbs the flavors.

Return the reserved beef to the pan and mix everything well to finish cooking the beef and heat all ingredients together.

Turn off the heat and stir in the chopped green onions and sesame seeds. Serve immediately.
Notes
For best results, use jasmine rice cooked the day before; cold rice fries better and doesn't get sticky. If the broccoli is very tough, you can blanch it in boiling water for 1 minute before adding it to the wok.
