Honey Lemon Garlic Chicken

Ingredients
- 1 lb chicken thighs (skin-on, boneless preferred for even cooking)
- salt (to taste)
- black pepper (to taste, plus extra for the sauce)
- 0.25 cup cornstarch (for coating)
- 2 tbsp butter (for the sauce)
- 3 garlic (cloves, minced)
- 1 tbsp soy sauce
- 1 tbsp mirin
- 2 tbsp honey
- 0.5 tsp chili flakes (or to taste)
- 0.5 tsp paprika
- 1 lemon (zested and juiced)
- 2 cup steamed rice (for serving)

Season the chicken thighs thoroughly with salt and black pepper on both sides.

Lightly coat each piece of chicken with cornstarch, shaking off any excess.

In a pan over medium-high heat, add the chicken skin-side down. Cook until the skin is golden and crispy.

Flip the chicken over and continue to cook for another 6 minutes until cooked through.

Remove the chicken from the pan and set aside. In the same pan, melt the butter.

Add the minced garlic, soy sauce, mirin, honey, chili flakes, paprika, lemon zest, lemon juice, and black pepper to the pan.

Cook the sauce over medium heat, stirring occasionally, until it thickens into a glaze.

Add the chicken back into the pan and baste it generously with the thickened sauce.

Serve the chicken immediately over hot steamed rice.
Notes
For the best results, use skin-on chicken thighs to achieve maximum crispiness. You can adjust the chili flakes based on your spice preference.
