Healthy Chickpea Nuggets
A healthy and crispy alternative to traditional nuggets, made with chickpeas and a nut coating, served with a refreshing yogurt sauce.

Ingredients
- 200 g Cooked chickpeas (drained)
- 30 g Almond flour
- 1 Egg (for the nugget dough)
- Salt (to taste)
- 1 Egg (beaten, for the coating)
- 50 g Toasted almonds (chopped for the coating)
- Garlic powder (to taste for the coating)
- Black pepper (to taste for the coating)
- Dried oregano (to taste for the coating)
- 1 Greek yogurt (a standard container of approx 125g)
- 1 Pickle (finely chopped)
- 1 chorro Lemon (lemon juice)
- Chives (chopped to taste)

In a food processor or blender, place the 200g of cooked chickpeas, the 30g of almond flour, one egg, and a pinch of salt.

Blend the mixture until a homogeneous dough is obtained. Using your hands, take portions of the dough and shape them into nuggets.

Prepare the coating by mixing the toasted and chopped almonds with the garlic powder, salt, pepper, and dried oregano on a plate.

Beat the second egg in a separate bowl.

Dip each nugget first into the beaten egg and then into the nut and spice mixture, pressing lightly so that it adheres well.

Place the nuggets in the air fryer and cook at 200°C for 10 to 15 minutes until golden and crispy. If using an oven, preheat to the same temperature and cook for a few additional minutes.

While the nuggets are cooking, prepare the sauce by mixing the Greek yogurt, chopped pickle, splash of lemon juice, chopped chives, salt, and pepper in a bowl.

Serve the nuggets hot, accompanied by the yogurt sauce.
Notes
Some users suggest adding shredded cheese to the nugget mixture for extra juiciness. If you don't have pickles for the sauce, you can substitute them with jalapeños for a spicy touch.
