Tender, spiced baked donuts made with carrot, dates or banana, and oat flour. They are finished with a light yogurt and cinnamon topping for a simple, healthy dessert.

Ingredients

  • 150 g Carrot (Peeled and chopped)
  • 2 Eggs (Preferably large)
  • 50 g Pitted dates (Alternatively, use 1 medium ripe banana; choose one of the two options)
  • 40 g Oat flour (May be replaced with buckwheat flour)
  • 1 tsp Ground cinnamon (For the batter)
  • 8 g Baking powder
  • Coconut oil or olive oil (For lightly greasing the molds; as needed)
  • 60 g Plain yogurt or Greek yogurt (For lightly dipping the donuts. Plant-based yogurt may also be used; the amount is estimated because the recipe does not specify a measurement)
  • Ground cinnamon (For sprinkling at the end, to taste)

Steps

    Preheat the oven to 180 °C. Lightly grease four donut molds with coconut oil or olive oil, making sure to coat the sides and center of each cavity well.

    Place the chopped carrot, eggs, pitted dates—or banana—oat flour—or buckwheat flour—1 tsp of cinnamon, and baking powder in a blender or food processor. Blend until smooth, with no large pieces of carrot remaining.

    Divide the batter evenly among the prepared molds, filling them uniformly but not completely to the rim, leaving room for the donuts to rise during baking.

    Bake at 180 °C for approximately 20 minutes, until the donuts are firm and lightly golden, and a toothpick inserted into the thickest part comes out clean or with a few moist crumbs.

    Remove the molds from the oven and let the donuts cool completely before unmolding them. If they do not release easily, run a spatula or silicone spatula around the sides to help loosen them without breaking.

    If they remain stuck because the mold is not nonstick or its coating has worn off, freeze the donuts in the mold and unmold them once frozen; then let them thaw before serving.

    Lightly dip each donut in plain yogurt, Greek yogurt, or plant-based yogurt, without covering it completely. Sprinkle a little more cinnamon on top and serve.

Notes

The recipe calls for 50 g of dates or 1 banana; do not use both. The amount of yogurt and greasing oil has been estimated because the author does not provide an exact measurement. Store the donuts refrigerated and preferably consume them within 2-3 days.
