Ingredients
- 800 g potatoes (peeled and chopped for mashing)
- 50 g butter (divided)
- 2 leeks (sliced)
- 0.5 cabbage (shredded)
- 500 g beef mince
- 1 onion (diced)
- 2 carrots (diced)
- 400 ml beef stock
- 100 g cheddar cheese (grated)
- dried herbs (thyme or rosemary recommended)
- salt (to taste)
- black pepper (to taste)
Steps
- 1
Boil the chopped potatoes in salted water until tender, then drain and mash with a knob of butter and seasoning until creamy.
- 2
In a separate pan, sauté the sliced leeks and shredded cabbage in butter until softened and buttery.
- 3
Mix the buttery leeks and cabbage into the mashed potatoes.
- 4
In a large skillet, brown the beef mince with the diced onion and carrots until the meat is cooked through and vegetables are softening.
- 5
Add the beef stock and dried herbs to the mince mixture. Simmer for 10-15 minutes until the sauce has thickened into a rich stew.
- 6
Spread the mashed potato mixture into the bottom of a large ovenproof baking dish.
- 7
Pour the rich beef mince stew over the top of the potato layer.
- 8
Top the dish with a generous layer of grated cheddar cheese.
- 9
Place under a hot grill (broiler) for a few minutes until the cheese is melted, golden, and bubbling.
Notes
The creator suggests this 'upside down' method allows the gravy to soak into the mash for better flavor. Ensure the mince stew is thick before layering so it doesn't make the mash too runny.
