Ingredients

  • 1 butternut squash (peeled and cubed)
  • 1 head broccoli (cut into florets)
  • 0.5 head cabbage (shredded)
  • 2 leeks (sliced)
  • 50 g butter (for the leeks and sauce)
  • 50 g plain flour (for the roux)
  • 500 ml milk (whole or semi-skimmed)
  • 150 g cheddar cheese (grated, plus extra for topping)
  • 1 tsp mustard (English or Dijon)
  • 2 tbsp olive oil (for roasting vegetables)

Steps

  1. 1

Preheat your oven to 200°C (400°F).

  2. 2

Place the cubed butternut squash and broccoli florets on a large baking tray. Drizzle with olive oil, season with salt and pepper, and toss to coat. Roast in the oven for 20-25 minutes until tender and starting to brown.

  3. 3

While the vegetables roast, sauté the sliced leeks in a knob of butter over medium heat until soft and buttery.

  4. 4

Steam or lightly boil the shredded cabbage for 3-4 minutes until just tender, then drain thoroughly.

  5. 5

Prepare the cheese sauce: Melt the remaining butter in a saucepan. Stir in the flour and cook for 1 minute to create a roux. Gradually whisk in the milk until the sauce is thick and smooth.

  6. 6

Remove the sauce from the heat and stir in the mustard and most of the grated cheese until melted.

  7. 7

Combine the roasted squash, broccoli, steamed cabbage, and buttery leeks in a large ovenproof baking dish.

  8. 8

Pour the golden cheese sauce over the vegetables, ensuring they are well covered.

  9. 9

Top with the remaining grated cheese and bake in the oven for 15-20 minutes until the top is gooey, golden, and bubbling.

Notes

The creator mentions this is a perfect 'cosy comfort food' for Sunday dinners. Variations mentioned in comments include adding cauliflower or roasting the vegetables with cumin, paprika, and cinnamon for an extra 'autumn vibe'.
