Flourless Zucchini Tortillas
A healthy and delicious alternative to traditional tortillas, made only with zucchini and mozzarella cheese. They are perfect for a light dinner, low in carbs, and naturally gluten-free.

Ingredients
- 0.5 zucchini (small, washed and grated)
- 80 g mozzarella cheese (shredded)
- 2 hard-boiled eggs (grated for the filling)
- 1 tbsp kefir (can be substituted with Greek or plain yogurt)
- spices (to taste (for the filling))
- avocado (to taste for the filling)

Wash and grate the half small zucchini.

Transfer the grated zucchini to a clean cloth or kitchen mesh and squeeze firmly to extract as much excess liquid as possible.

In a non-stick skillet over medium heat, place a portion of the mozzarella cheese, forming a circle.

Cover the cheese with a portion of the grated zucchini and cook for about 5 minutes, or until the base is golden brown and can be flipped.

Flip the tortilla and cook for 1 more minute on the other side. Repeat the process to make 3 tortillas and set them aside.

To prepare the filling, grate the hard-boiled eggs into a bowl.

Mix the grated eggs with the tablespoon of kefir (or yogurt) and spices of your choice.

Fill each zucchini tortilla with the egg mixture and add avocado slices to taste.

Fold the tortillas and serve immediately.
Notes
You can use Greek or plain yogurt if you don't have kefir. It is essential to squeeze the zucchini very well so the tortilla maintains its structure.
