Ingredients

  • 1 lb lean ground turkey
  • 2 sweet potatoes (medium, diced small)
  • 1 tbsp olive oil
  • 3 cloves garlic (minced)
  • 0.5 white onion (diced)
  • 2 cups broccoli florets
  • Parmesan cheese (to taste)
  • salt (to taste)
  • black pepper (to taste)
  • paprika (to taste)
  • oregano (to taste)
  • 0.5 cup plain Greek yogurt
  • 0.25 cup yellow mustard
  • 0.25 cup Dijon mustard
  • 2 tbsp honey
  • garlic powder (to taste)
  • cayenne pepper (to taste)

Steps

    Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced sweet potatoes and cook for 5-7 minutes, stirring occasionally, until they begin to soften and brown.

    Move the sweet potatoes to the sides of the skillet to create space in the center. Add the ground turkey to the middle of the pan.

    Add the diced white onion and minced garlic to the skillet with the turkey.

    Cook the turkey mixture, breaking it up with a spoon, until the turkey is browned and cooked through.

    Stir the sweet potatoes back into the turkey mixture. Add the broccoli florets and Parmesan cheese.

    Season the mixture with salt, pepper, paprika, and oregano to taste. Stir well to combine and continue cooking until the broccoli is tender-crisp.

    While the turkey mixture finishes cooking, prepare the sauce. In a small bowl, whisk together the plain Greek yogurt, yellow mustard, Dijon mustard, honey, garlic powder, and cayenne pepper. Season with additional salt and pepper if desired.

    Drizzle the hot honey mustard sauce over the turkey and sweet potato mixture in the skillet, or divide the mixture into two bowls and top with the sauce.
