Ingredients

  • 1 lb 93/7 lean ground beef
  • 2 packs immi Black Garlic Chicken ramen (Cook according to package directions, stopping 1 minute early; reserve some noodle water.)
  • 2 tbsp Garlic (Minced)
  • 1 tbsp Fresh ginger (Grated)
  • 2 cups Broccoli florets
  • 4 Green onions (Sliced, for garnish)
  • Sesame seeds (For garnish, to taste)
  • 0.25 cup Low-sodium soy sauce
  • 1 tbsp Light brown sugar
  • 1 tbsp Sugar-free maple syrup
  • 1 tbsp Hoisin sauce
  • 1 tsp Sesame oil
  • 1 tsp Rice vinegar
  • 0.5 packet immi Black Garlic Chicken ramen seasoning (Use half of one seasoning packet)
  • 1 tsp Cornstarch
  • Cold water (Add enough to whisk the sauce smoothly; amount not specified)
  • 0.25 tsp Black pepper
  • 0.25 tsp Crushed red pepper flakes

Steps

  1. 1

Bring a pot of water to a boil and cook the ramen noodles according to the package directions, stopping 1 minute before the stated cooking time so the noodles remain slightly firm. Reserve a small amount of the cooking water, then drain the noodles.

  2. 2

Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it into small crumbles, until browned and cooked through, about 5–7 minutes. Drain excess fat if necessary.

  3. 3

Add the minced garlic and grated ginger to the browned beef. Stir and cook for about 30 seconds, until fragrant but not browned.

  4. 4

Add the broccoli florets to the skillet. Stir-fry until bright green and tender-crisp, about 3–5 minutes.

  5. 5

In a small bowl, whisk together the soy sauce, brown sugar, sugar-free maple syrup, hoisin sauce, sesame oil, rice vinegar, half of the ramen seasoning packet, cornstarch, cold water, black pepper, and crushed red pepper flakes. Whisk until the cornstarch is fully dispersed and no lumps remain.

  6. 6

Pour the Mongolian sauce into the skillet with the beef and broccoli. Stir continuously and simmer for 2–3 minutes, until the sauce thickens and becomes glossy.

  7. 7

Add the drained ramen noodles to the skillet. Toss until the noodles are evenly coated with the sauce and combined with the beef and broccoli. If the mixture is too thick, add a small splash of reserved noodle water.

  8. 8

Divide the ramen between two bowls. Top with sliced green onions and sesame seeds, then serve immediately.
