Bone-in fish is seasoned, coated in a paprika-spiced flour and cornstarch mixture, then fried until crisp and golden. Refrigerating the seasoning and resting the coating help the flavors adhere before frying.

Weights are estimates. Together, the ingredients weigh about 760 g before cooking, which is about 190 g per serving.
Steps
Gently squeeze excess water from the cleaned fish, then pat it dry with paper towels.
Combine the paprika, onion powder, chili powder, black pepper, curry powder, garlic paste, salt, and bouillon powder for seasoning. Rub the mixture thoroughly over the fish.
Cover the seasoned fish and refrigerate for 30 minutes to 1 hour.
In a separate bowl, combine the flour, cornstarch, paprika, onion powder, salt, and bouillon powder for the coating.
Roll each piece of fish in the flour mixture, pressing gently so it is coated evenly.
Shake off excess flour thoroughly, then let the coated fish rest for 5–10 minutes.
Heat vegetable oil to approximately 170–175°C (350–350 °F) (340–350°F (170–180 °C)).
Fry the fish in batches until golden brown, crispy, and cooked through, turning carefully as needed.
Transfer the fried fish to a wire rack to drain excess oil.
Notes
The source does not specify a frying duration or the amount of oil; fry in batches until the stated visual and doneness cues are reached. The unit for the ¼ bouillon powder in the coating is not given.
