Weights are estimates. Together, the ingredients weigh about 880 g before cooking, which is about 220 g per serving.
Steps
In a medium bowl, combine the whipped cream cheese, garlic powder, onion powder, smoked paprika, black pepper, and American cheese shreds.
Mix everything together until thoroughly combined. Refrigerate for at least 30 minutes to allow flavors to meld and the spread to firm up.
Preheat a flat top grill or cast iron skillet over high heat.
Place the 3-4 oz beef balls onto the hot surface. Top each ball with a handful of the thinly sliced onions and jalapeños.
Using a heavy spatula, smash the beef balls down firmly, pressing the onions and jalapeños into the meat. Season the patties with Lawry's Seasoned Salt.
Cook until a deep, dark crust has formed on the bottom and the edges are crispy. Flip the patties.
Immediately place a slice of American cheese on top of each patty and allow it to melt while the second side finishes cooking.
Steam the Martin's Potato Rolls until soft and warm.
Spread a generous layer of the prepared chilled cheese spread onto the bottom half of the steamed bun.
Stack two patties onto the bottom bun.
Apply a generous amount of burger sauce to the top bun and close the burger to serve.
Notes
The author emphasizes that the cold cheese spread is the key to balancing the heat from the seared jalapeños. Steaming the buns is highly recommended for the authentic texture.
