Ingredients

  • 4 Onions (Peeled and cut into large pieces)
  • 2 Heads of garlic (Whole garlic heads; remove from the oven 15 minutes before the onions)
  • 0.25 cup Olive oil
  • 1 tbsp Paprika
  • 1 tbsp Dried oregano
  • 1 tsp Garlic powder
  • 1 tsp Chili flakes
  • 1 tsp Salt
  • 1 cup Heavy cream (Thick cream)
  • 0.5 cup Parmesan cheese (Grated)
  • 0.25 cup Fresh parsley (Chopped)
  • Dried pasta (Quantity not specified; estimated at 1 lb for 4 servings)
  • 0.5 cup Pasta cooking water (Reserved before draining the pasta)

Steps

  1. 1

Preheat the oven to 375 °F (190 °C). Place the onions, garlic heads, paprika, oregano, garlic powder, chili flakes, salt, and olive oil in a baking dish. Toss to coat the vegetables well with the oil and spices.

  2. 2

Roast the baking dish for 45 minutes. Remove the garlic heads after 30 minutes, 15 minutes before the onions are done. The onions should be soft and golden, and the garlic very tender.

  3. 3

While the vegetables are roasting, cook the pasta according to the package instructions until al dente. Before draining, reserve ½ cup of the cooking water.

  4. 4

When ready, squeeze the roasted garlic cloves from their skins and place them in a large bowl along with the roasted onions. Mash or blend until the sauce is as smooth or rustic as you prefer.

  5. 5

Add the heavy cream, chopped parsley, and Parmesan cheese to the roasted vegetables. Stir until combined and creamy.

  6. 6

Add the cooked pasta and reserved pasta water. Toss until the sauce evenly coats all the noodles; if it is too thick, add a little more cooking water.

  7. 7

Serve immediately, ideally topped with a little more Parmesan and parsley, if desired.

Notes

The publication does not specify the amount of pasta; 1 lb (454 g) was estimated for 4 servings. The transcript mentions lemon, but it does not appear in the written ingredient list or the published steps, so it was not included. Adjust the consistency with additional cooking water as needed.
