Ingredients
- 8 Corn tortillas (Small or taco-size)
- 1 lb 80/20 ground beef (Divided into 8 small portions)
- Salt (To taste)
- 2 tsp Fajita seasoning (To taste)

Remove the kernels from the four corn cobs and chop the onion, garlic, and cilantro. Have the Farmer cheese, mayonnaise, Tajín, and lime juice ready.

Heat the olive oil in a large skillet or griddle over medium-high heat. Add the onion and cook for 3-4 minutes, stirring, until it begins to soften and brown.

Add the chopped garlic to the skillet and cook for about 30-60 seconds, until fragrant but not browned.

Add the corn kernels and Tajín. Cook for 5-8 minutes, stirring occasionally, until the corn is tender and has some browned spots.
