Ingredients

  • 1 Iceberg Lettuce (large whole leaves for wrapping)
  • 1 cup Sushi Rice (cooked)
  • 200 g Breaded Chicken Breast Strips (preferably Real Good Foods brand)
  • 2 tbsp Mayonnaise
  • 1 tsp Sriracha (or to taste)
  • 0.5 Cucumber (cut into thin strips)
  • 1 Carrot (grated or cut into thin strips)
  • 2 Scallions (chopped)

Steps

  1. 1

Prepare the sushi rice according to the package instructions and let it cool slightly.

  2. 2

Cook the breaded chicken breast strips until golden brown and crispy (you can use an oven or air fryer).

  3. 3

In a small bowl, mix the mayonnaise with the sriracha to make the sauce.

  4. 4

Wash and carefully dry the iceberg lettuce leaves, keeping their cup shape intact.

  5. 5

Place a portion of sushi rice in the center of each lettuce leaf.

  6. 6

Add the chicken strips over the rice.

  7. 7

Arrange the cucumber, carrot, and scallions over the chicken.

  8. 8

Finish with a drizzle of the mayonnaise and sriracha mixture before wrapping and serving.

Notes

For a healthier version, you can use grilled chicken instead of breaded chicken. Make sure the lettuce is thoroughly dry so the wrap does not fall apart.
