Ingredients

  • 8 Corn tortillas (Small or taqueria-style)
  • 1 lb 80/20 ground beef (Divided into 8 portions to smash onto the tortillas)
  • Salt (To taste)
  • Fajita seasoning (To taste)
  • Olive oil (For cooking the corn and aromatics; as needed)
  • 1 Onion (Chopped)
  • 4 Garlic cloves (Chopped or thinly sliced)
  • 4 Corn cobs (Kernels removed; approximately 3 cups of kernels)
  • Tajín (To taste)
  • 0.5 cup Farmer cheese (From Lifeway Kefir)
  • 2 tbsp Mayonnaise
  • Cilantro (Chopped, to taste)
  • Lime juice (To taste)

Steps

    Prepare all the ingredients: chop the onion, garlic, and cilantro; remove the kernels from the corn and cut the limes to extract the juice.

    Heat a griddle or large skillet over medium-high heat. Add a little olive oil.

    Add the onion and garlic to the griddle. Cook until softened and fragrant, approximately 3 to 4 minutes, taking care not to burn the garlic.

    Add the corn kernels and Tajín. Cook, stirring occasionally, until the corn is hot and lightly browned, about 5 to 7 minutes.

    Remove the corn from the heat and mix it with the farmer cheese, mayonnaise, cilantro, and lime juice. Taste and adjust the Tajín and salt if necessary. Keep warm.

    Place a corn tortilla on the hot griddle and put a portion of ground beef on top. Press the beef firmly against the tortilla, forming a thin layer that covers almost the entire surface.

    Season the beef with salt and fajita seasoning. Cook beef-side down for 2 to 3 minutes, until well browned and the beef releases easily from the griddle.

    Flip the taco and cook the tortilla side for 1 to 2 minutes, until toasted and crisp and the beef reaches an internal temperature of 160 °F/71 °C. Repeat with the remaining tortillas and beef.

    Serve the smash tacos immediately, topped with the creamy elote. Finish with cilantro, lime juice, and additional Tajín to taste.
