Ingredients

  • 0.25 cup plain Greek yogurt (for the base)
  • 2 tbsp peanut butter (for the base)
  • 2 tbsp butter (softened, for the base)
  • 2 tbsp honey (for the base)
  • 3 scoop vanilla protein powder (Levels brand recommended (25g protein per scoop), for the base)
  • 0.625 cup oat flour (1/2 cup + 2 tbsp, for the base)
  • 1 tsp vanilla extract (for the base)
  • 0.125 tsp salt (1/8-1/4 tsp to taste, for the base)
  • 1 tbsp mini chocolate chips (for the base)
  • 0.5 cup 1% cottage cheese (for the frosting)
  • 2 oz light cream cheese (Trader Joe's brand recommended, for the frosting)
  • 1 tbsp maple syrup (for the frosting)
  • 1 scoop vanilla protein powder (for the frosting)
  • 2 tsp spirulina powder (for the frosting color)
  • 1 tsp vanilla extract (for the frosting)
  • 0.5 tsp cake-batter extract (optional, for the frosting)
  • 1 Back to Nature sandwich cookie (broken up for topping)

Steps

    In a medium bowl, mix the Greek yogurt, peanut butter, softened butter, honey, 3 scoops of vanilla protein powder, oat flour, vanilla, and salt until a thick dough forms.

    Gently fold in the mini chocolate chips into the base mixture.

    Line a loaf pan with parchment paper and press the base mixture firmly and evenly into the bottom of the pan.

    In a blender, combine the cottage cheese, light cream cheese, maple syrup, 1 scoop of protein powder, spirulina, vanilla, and cake-batter extract (if using).

    Blend the frosting ingredients until the mixture is very smooth and has a uniform blue color.

    Pour the blended frosting over the base in the loaf pan and spread it into an even layer.

    Break up one sandwich cookie and sprinkle the pieces over the top of the frosting.

    Place the pan in the freezer for 30 to 60 minutes until set.

    Remove from the freezer and let thaw for about 10 minutes before slicing into 7 bars.
