- 1 Lemon zest (Zest of 1 lemon)
- 2 Large eggs (For the batter)
- 1 tbsp Fresh lemon juice (For the batter)
- 0.25 cup All-purpose flour (Dry ingredients)
- 0.333 cup Almond flour (Dry ingredients)
- 22 g Vanilla protein powder (About 3/4 scoop, depending on brand)
- Salt (Pinch; no baking powder)
- 0.25 cup Powdered sugar (For the glaze)
- 0.25 cup Powdered monk fruit sweetener (For the glaze)
- 0.25 scoop Vanilla protein powder (About 7–8 g; for the glaze)
- 1.5 tbsp Nonfat Greek yogurt (For the glaze)
- 1.25 tbsp Fresh lemon juice (Use 1 to 1.5 tbsp for the glaze)
- 0.5 lemon Lemon zest (Zest of 1/2 lemon; for the glaze)
Steps
- 1
Preheat the oven to 325°F. Line an 8-by-8-inch pan with parchment paper.
- 2
In a bowl, mix the softened or melted butter, 1/4 cup nonfat Greek yogurt, granulated sugar, granulated monk fruit sweetener, and the zest of 1 lemon.
- 3
Add the 2 eggs and 1 tablespoon fresh lemon juice. Mix until smooth.
- 4
Fold in the all-purpose flour, almond flour, vanilla protein powder, and pinch of salt. Mix only until just combined.
- 5
Spread the batter into the parchment-lined pan.
- 6
Bake for 11–13 minutes. Remove the bars when the edges look set but the center is still slightly soft or underdone; they will firm as they cool.
- 7
Cool the bars completely in the pan.
- 8
To make the glaze, whisk the powdered sugar, powdered monk fruit sweetener, vanilla protein powder, Greek yogurt, lemon juice, and lemon zest until smooth.
- 9
Spread the glaze over the completely cooled bars.
- 10
Refrigerate for 20–30 minutes for clean slices.
- 11
Cut into 16 bars.
