Ingredients
- 3 scoop Vanilla protein powder (Author used Legion protein powder; for the base)
- 0.5 cup Almond flour (For the base)
- 0.5 cup Oat flour (For the base)
- 0.25 cup Fruity Pebbles, crushed (For the base)
- 0.25 cup Monk fruit sweetener (For the base)
- 3 tbsp Butter, melted (For the base)
- 4 tbsp Milk (Add 2 tablespoons at a time; the source specifies 4–6 tablespoons total, adding enough for a slightly crumbly dough that holds when pressed)
- 3 oz Low-fat cream cheese (Softened; for the topping)
- 1.5 tbsp Powdered sugar (For the topping)
- 1 scoop Vanilla protein powder (For the topping)
- 1 tbsp Butter, melted (For the topping)
- Fruity Pebbles (Extra for sprinkling on top)
Steps
- 1
Line a loaf pan with parchment paper, leaving some overhang so the finished bars can be lifted out easily.
- 2
In a medium bowl, stir together the vanilla protein powder, almond flour, oat flour, monk fruit sweetener, and crushed Fruity Pebbles.
- 3
Add the 3 tablespoons melted butter and stir to combine.
- 4
Add the milk 2 tablespoons at a time, stirring between additions. Continue adding milk until the mixture resembles a slightly crumbly dough that holds together when pressed; the source specifies approximately 4–6 tablespoons total.
- 5
Press the base mixture firmly and evenly into the bottom of the parchment-lined loaf pan.
- 6
In a clean bowl, combine the softened low-fat cream cheese, powdered sugar, vanilla protein powder, and 1 tablespoon melted butter.
- 7
Mix with a hand mixer or whisk until the topping is completely smooth and creamy.
- 8
Spread the cream cheese mixture evenly over the base layer.
- 9
Sprinkle extra Fruity Pebbles over the top, gently pressing them into the topping so they stick.
- 10
Place the pan in the freezer for about 30 minutes, or until the bars are firm enough to slice.
- 11
Lift the chilled slab out using the parchment overhang and cut it into 7 bars.
- 12
Serve and enjoy.
Notes
Store leftovers in the refrigerator for a softer texture or in the freezer for a firmer texture. The source does not specify a particular loaf-pan size.
