Weights are estimates. Together, the ingredients weigh about 900 g before cooking, which is about 75 g per serving.
Steps
Beat the softened butter and cream cheese together until combined.
Add both sugars and beat for 2–3 minutes, until the mixture is fluffy.
Add the egg and vanilla bean paste. Mix until combined.
Add the flour, salt, cornstarch, and baking soda. Mix until almost combined.
Fold in the chopped Oreos.
Divide the dough into 12 portions, approximately 50 g each.
Place the portions on a lined baking sheet and refrigerate for 1–2 hours.
Preheat the oven to 175°C (350 °F).
Flatten the chilled dough portions into discs approximately 2 cm thick.
Bake for 11–13 minutes, until the edges are slightly golden and the centres remain soft.
Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a cooling rack.
Sprinkle the cookies with a little sea salt.
For the coating, separate the 2 Oreos and scrape the cream filling into a bowl with the white chocolate melting wafers.
Crush the Oreo cookie halves into fine crumbs.
Melt the white chocolate and Oreo cream in the microwave or over a double boiler.
Stir the cookie crumbs into the melted chocolate mixture.
Spoon approximately 1 tablespoon of the coating mixture onto parchment paper for each cookie. Place a cooled cookie on top and gently press until the chocolate reaches the edges.
Let the coating set for 3–5 minutes.
Drizzle the cookies with additional melted white chocolate.
Notes
The source does not specify an amount for the additional melted white chocolate drizzle or the sea salt. Bake at 175°C (347°F).
