Weights are estimates. Together, the ingredients weigh about 940 g before cooking, which is about 235 g per serving.

Steps

Beer Cheese

  1. For the beer cheese, add the silken tofu, plant milk, nutritional yeast, stone-ground mustard, salt, lemon juice, garlic powder, onion powder, MSG, and white pepper to a high-powered blender. Blend until smooth.

  2. Pour the blended mixture into a medium stockpot over medium-high heat. Bring it to a bubbling state, stirring as needed to heat evenly.

  3. Add the gluten-free beer and cook for 5–10 minutes, whisking frequently, until the alcohol has cooked off. Lower the heat as needed because the mixture will foam.

  4. Reduce the heat to low. Add the tapioca starch a little at a time, whisking constantly to prevent lumps. Cook for a few more minutes, until the cheese is thick, gooey, and stretchy.

  1. Heat about 1/4 inch of high-heat oil in a skillet over high heat. Wrap the bacon strips around the plant-based hot dogs and secure the bacon with toothpicks.

  2. When the oil is hot, place the wrapped hot dogs in the skillet with the overlapped bacon ends facing down. Fry for 3–5 minutes, until the bacon is crispy and browning.

  3. Carefully turn the hot dogs and cook the other side.

  4. Steam the gluten-free buns in the microwave or in a steamer basket on the stove.

  5. Remove the toothpicks from the hot dogs and place each dog in a steamed bun. Top with a ladle of beer cheese and a sprinkle of chives.

Tampa Bay Dog Assembly

  1. For the Tampa Bay dogs, cook the plant-based hot dogs according to the package directions. Steam the gluten-free buns in the microwave or in a steamer basket on the stove.

  2. In the same pan used for the hot dogs, heat a bit of oil over medium-high heat. Add the sliced fresh and/or pickled jalapeños and cook until slightly charred on both sides.

  3. Spread a generous amount of plant-based cream cheese on one side of each bun and guava preserves on the other side.

  4. Place a hot dog in the middle of each bun and top with the charred jalapeños.

Notes

The source gives no serving yield or exact number of hot dogs, buns, or bacon strips; servings and overall times are estimates. Toothpicks are used to secure bacon, but no quantity is stated.
