Carrots are simmered in a buttery maple-and-thyme glaze until tender and glossy, then finished with Dijon mustard for a sharp counterpoint to the sweetness and fresh dill for garnish.

Weights are estimates. Together, the ingredients weigh about 1.26 kg before cooking, which is about 315 g per serving.
Steps
Peel the carrots. Keep smaller carrots whole; cut larger carrots into 1-inch rounds.
In a large pan over medium heat, melt the butter.
Add the carrots, thyme, and salt. Cover the pan with a lid or foil and steam the carrots for 3 minutes if small, or 5 minutes if whole.
Remove the cover. Add the maple syrup, chicken stock, and salt and pepper to taste.
Bring the liquid to a low simmer, then cover the pan and simmer on low for 5 minutes.
Remove the cover and continue simmering on low for 10–15 minutes, until the liquid has reduced to a thick glaze.
Turn off the heat once the glaze is thick enough to coat the carrots. Remove the thyme sprigs.
Stir in the Dijon mustard, coating the carrots and combining it with the glaze.
Serve topped with minced dill.
Notes
The source's ingredient list says chicken stock, while its ingredient notes allow chicken or vegetable stock; use vegetable stock for a vegetarian version. Timing guidance for the initial steaming distinguishes small carrots (3 minutes) and whole carrots (5 minutes), but does not specify a steaming time for cut rounds.
