Weights are estimates. Together, the ingredients weigh about 2.18 kg before cooking, which is about 545 g per serving.

Steps

  1. Heat 1 tablespoon of the oil in a large pan over medium heat. Chop the plant-based sausage and add it to the pan.

  2. Cook the sausage for 2–3 minutes, then add a few dashes of liquid smoke and mix well.

  3. Add the soy sauce and continue cooking until the sausage is nicely browned. Remove it from the pan and set aside.

  4. Add the remaining 1 tablespoon of oil to the pan and reduce the heat to medium-low.

  5. Add the diced onion and sauté for 2–3 minutes.

  6. Add the diced celery and continue cooking for about 5 minutes, or until the onions are translucent.

  7. Add the chopped red and green bell peppers and mix well. Cook for 3–5 minutes.

  8. Add the Cajun spice powder and smoked paprika, stirring to combine.

  9. Add the minced garlic and cook for another 2–3 minutes, or until fragrant.

  10. Add the tomato paste and mix it into the vegetable mixture.

  11. Pour in the broth and vegan Worcestershire sauce, stirring well to combine. Allow the mixture to simmer for 5 minutes.

  12. Add the cooked sausage back to the pan.

  13. Add the chopped cabbage and cover the pan with a lid. Cook for 5–10 minutes.

  14. Remove the lid and mix well. Season with salt and pepper to taste.

  15. Replace the lid and continue cooking for another 15–20 minutes, or until the cabbage is tender and cooked to your desired doneness. Taste and adjust the seasonings if needed.

  16. Serve as is or alongside cooked rice or noodles. Garnish with chopped fresh parsley.

Notes

Plant-based sausage may be replaced with plant-based ground meat or a combination of sausage and ground meat alternative; if combining, divide the amount between them, keeping the total plant-based protein to approximately 14–16 oz. Serve alone or with cooked rice or noodles. Cooking time is estimated from the stated ranges; prep time is estimated.
