Steps
Add the chipotle-seasoned chicken directly to the slow cooker.
Add the Mexicali dip, drained and rinsed Great Northern beans, drained corn, and diced green chiles. The creator leaves the green chiles undrained, but says draining them is an option for a milder chili.
Add the diced onion, minced garlic, and chicken stock or broth.
Add the garlic powder, onion powder, and black pepper. The recipe lists salt, while the creator says to wait and adjust salt at the end.
Stir everything together as well as possible; the ingredients may still be cold and firm.
Cover and cook on HIGH for 2–3 hours or LOW for 4–5 hours, until the onion is tender and the chili is heated through to 165°F (74 °C). The creator describes stirring once after about 1 hour on HIGH; the written instructions do not require this.
Stir well to incorporate the melted Mexicali dip. If the chicken pieces are large, shred or chop them before serving.
Taste and adjust the seasonings. Add a splash of chicken stock if you prefer a thinner consistency.
Serve with optional shredded cheese, fresh cilantro, sliced jalapeño, or a squeeze of lime juice. The creator also suggests serving it over white rice to mellow the spice.
Notes
The Mexicali dip provides the creamy texture without a separate block of cream cheese. The transcript says the creator cooked it for about 2–2½ hours on HIGH, while the written recipe gives 2–3 hours on HIGH or 4–5 hours on LOW; follow the written recipe's temperature target of 165°F. White rice is suggested to mellow the spice. Optional cumin or paprika may be added to taste, as mentioned in the transcript.
