Hot Honey Baked Feta & Salmon Pasta

Ingredients
- 2 Salmon fillets (skinless, cut into large chunks)
- 200 g Feta cheese (one block)
- 400 g Cherry tomatoes (whole)
- 250 g Pasta (dry weight; fusilli or penne work well)
- 2 tbsp Hot honey (plus extra for drizzling)
- 2 tbsp Olive oil
- 3 cloves Garlic (minced)
- 1 tsp Dried oregano
- Salt and black pepper (to taste)
- 1 handful Fresh basil (torn or chopped for garnish)

Preheat your oven to 200°C (400°F).

In a large ovenproof baking dish, place the block of feta cheese in the center. Surround the feta with the cherry tomatoes and the chunks of salmon.

Drizzle the olive oil and hot honey over the salmon, feta, and tomatoes. Sprinkle with minced garlic, dried oregano, salt, and black pepper.

Place the dish in the oven and bake for 25 minutes until the tomatoes have burst and the salmon is cooked through.

While the salmon and feta are baking, bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta, reserving a small splash of pasta water.

Remove the baking dish from the oven. Use a fork to mash the softened feta and burst tomatoes, stirring them together to create a creamy sauce.

Add the cooked pasta to the baking dish. Toss everything together until the pasta is well coated in the feta and tomato sauce. If the sauce is too thick, add a splash of the reserved pasta water.

Garnish with fresh basil and an extra drizzle of hot honey before serving.
Notes
For extra fiber, use whole wheat pasta. If you don't have hot honey, you can mix 2 tablespoons of regular honey with 1/2 teaspoon of chili flakes. Per serving: 560 kcal, 30g Protein.
