Hot Honey Baked Feta & Salmon Pasta

Ingredients
- 200 g Feta cheese (one block)
- 400 g Salmon fillets (approx. 2-3 fillets, skinless)
- 500 g Cherry tomatoes
- 250 g Pasta (dry weight, such as fusilli or penne)
- 2 tbsp Hot honey (for drizzling)
- 1 tbsp Olive oil
- Fresh basil (a handful, torn)
- Salt and black pepper (to taste)

Preheat your oven to 200°C (400°F).

In a large ovenproof baking dish, place the block of feta cheese in the center and surround it with the cherry tomatoes.

Place the salmon fillets into the dish alongside the tomatoes and feta.

Drizzle the olive oil and hot honey over the salmon, feta, and tomatoes. Season generously with salt and black pepper.

Bake in the preheated oven for 25 minutes until the tomatoes have burst and the salmon is cooked through.

While the salmon and feta are baking, cook the pasta in a large pot of salted boiling water according to the package instructions until al dente. Drain, reserving a small amount of pasta water.

Once the baking dish is out of the oven, use a fork to break up the salmon and mash the softened feta and tomatoes together to create a creamy sauce.

Add the cooked pasta and fresh basil to the baking dish. Toss everything together until the pasta is well coated in the sauce, adding a splash of pasta water if needed to loosen the consistency.

Serve immediately while hot.
