Weights are estimates. Together, the ingredients weigh about 655 g before cooking, which is about 110 g per serving.

Steps

  1. Put the cottage cheese and eggs in a blender and blend until smooth.

  2. Transfer the blended mixture to a large bowl. Add the baking powder, garlic powder, basil, Italian seasoning, salt, and pepper; gently fold in the oat flour.

  3. Line a baking sheet with parchment paper. Divide the dough into six portions on the sheet and flatten them into mini pizza bases.

  4. Spread the pizza sauce over the bases.

  5. Add the light mozzarella and turkey pepperoni slices, using three slices per mini pizza.

  6. Bake in a preheated oven at 200 °C (400 °F) for 25–30 minutes.

  7. For the last two minutes or so, switch to the broiler to brown the surface.

  8. Let the mini pizzas cool before serving.

Notes

The recipe indicates that it makes 6–8 mini pizzas; the calories and macronutrients stated by the author are calculated by dividing the dough into 6 portions. The quantities of oat flour and cottage cheese are given in cups without weights; the nutritional gram amounts are estimates. “Blended cottage cheese” is interpreted as cottage cheese to be blended in step 1. The author does not specify how much to flatten the bases or the broiler temperature.
