Ingredients

  • 150 g cottage cheese
  • 1 egg (medium (M))
  • 30 g vanilla instant pudding powder (can substitute with cornstarch plus extra vanilla and sweetener)
  • 10 ml lemon juice
  • 1.5 tsp lemon zest (citroenrasp)

Steps

    Preheat your convection oven to 160°C (320°F).

    Place the cottage cheese, egg, lemon juice, lemon zest, and vanilla pudding powder (or cornstarch) into a food processor or mini chopper.

    If you are using cornstarch instead of pudding powder, add extra vanilla extract and sweetener at this stage, as cornstarch is not pre-sweetened.

    Blend the ingredients for approximately 2 minutes until the mixture is completely smooth and homogeneous.

    Grease a small cake tin (approximately 11-12 cm in diameter) and pour the batter into it.

    Bake the cheesecake in the preheated oven for 30 to 35 minutes.

    Remove from the oven and allow it to cool completely; the cheesecake will sink slightly as it cools.

Notes

If using cornstarch instead of instant pudding powder, you must add extra vanilla and sweetener, otherwise the cake will not be sweet enough. The cake is best served fully chilled.
