Ingredients

  • 3 large egg whites (at room temperature)
  • 0.5 cup granulated sugar
  • 4 tbsp unsalted butter (melted and cooled slightly)
  • 1 tsp vanilla extract
  • 0.75 cup all-purpose flour
  • 0.25 tsp fine salt
  • 2 cup heavy cream (well chilled)
  • 14 oz sweetened condensed milk (1 can)
  • 2 tsp vanilla extract (for the ice cream)
  • 4 oz semisweet chocolate, chopped (for the fudge ripple)
  • 0.5 cup heavy cream (for the fudge ripple)
  • 12 oz semisweet chocolate chips (for coating)
  • 2 tbsp refined coconut oil (or another neutral oil)
  • 0.75 cup dry-roasted peanuts (finely chopped)

Steps

  1. 1

Prepare the taco molds before cooking the shells: set out a rolling pin or several narrow bottles, and line a tray with parchment. The shells must be shaped while hot because they become crisp and rigid as they cool.

  2. 2

Whisk the egg whites and granulated sugar until smooth. Add the melted butter and vanilla extract and whisk again until evenly combined.

  3. 3

Add the flour and salt, then stir just until a smooth, pourable batter forms. Do not overmix.

  4. 4

Heat a pizzelle iron or waffle-cone maker according to the manufacturer's instructions. Cook thin portions of batter one at a time until lightly golden and flexible, usually about 1–2 minutes.

  5. 5

Immediately drape each hot waffle over a rolling pin or taco-shaped mold and gently press it into a curved shell. Hold it in place briefly until set, then transfer it to a rack to cool completely. Repeat with the remaining batter.

  6. 6

Make the fudge ripple by heating the heavy cream until steaming but not boiling. Pour it over the chopped semisweet chocolate, let it stand for 1–2 minutes, then stir until glossy and smooth. Cool until thickened but still spoonable.

  7. 7

Whip the chilled heavy cream to medium-stiff peaks. Fold in the sweetened condensed milk and vanilla extract gently, stopping as soon as the mixture is smooth and airy.

  8. 8

Spread about one-third of the ice-cream mixture into a loaf pan or freezer-safe container. Spoon over some cooled fudge ripple and lightly swirl it with a knife. Repeat the layers, finishing with fudge ripple.

  9. 9

Cover the ice cream and freeze until firm, at least 4 hours or preferably overnight.

  10. 10

Fill the cooled waffle-cone taco shells with the frozen ice cream, using a small scoop or piping bag. Return the filled tacos to the freezer for at least 30 minutes so the ice cream firms up again.

  11. 11

Melt the chocolate chips with the coconut oil in a heatproof bowl over a pan of barely simmering water, or in short microwave intervals, stirring frequently until smooth. Stir in the chopped peanuts.

  12. 12

Dip or spoon the chocolate-peanut coating over the tops of the frozen tacos. Place them on parchment and freeze until the coating is completely set, about 10–15 minutes, then serve.
