Ingredients

  • 2 lb sweet potatoes (mashed; source gives a range of 2–3 lb)
  • 6 tbsp butter (melted)
  • 0.5 cup brown sugar
  • 1 tbsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp vanilla extract
  • 1 tsp salt
  • 10 oz marshmallows
  • brown sugar (extra, for optional topping; amount described as “a little”)
  • olive oil or vegetable oil (optional, to lightly rub on sweet potato skins)
  • aluminum foil (for wrapping each potato)
  • oil or butter (for greasing the baking dish)

Steps

  1. 1

Preheat the oven to 400°F (200°C). Wash and dry the sweet potatoes, then prick each potato 6–10 times with a fork to let steam escape.

  2. 2

If desired, lightly rub the potato skins with olive or vegetable oil. Wrap each potato loosely in aluminum foil and place them on a baking sheet.

  3. 3

Bake for 45–60 minutes, or up to 75–90 minutes for larger potatoes. Start checking around 45 minutes; they are ready when softened and easily pierced with a fork.

  4. 4

Carefully unwrap the potatoes and let them cool slightly. Remove the skins, then mash the flesh in a large bowl until smooth. Alternatively, peel the potatoes, cut them into large chunks, boil until fork-tender, and mash.

  5. 5

Add the melted butter, ½ cup brown sugar, cinnamon, nutmeg, vanilla extract, and salt to the mashed sweet potatoes. Mix until well combined.

  6. 6

Preheat the oven to 375°F (190°C). Grease a baking dish with oil or butter, transfer the sweet potato mixture into it, and spread it into an even layer.

  7. 7

If desired, sprinkle a little extra brown sugar over the top.

  8. 8

    Bake at 375°F (190°C) for 30 minutes.

  9. 9

Remove the casserole from the oven and evenly distribute the marshmallows over the top.

  10. 10

Return the casserole to the oven for another 10 minutes, watching closely until the marshmallows are golden brown.

  11. 11

Remove from the oven and serve warm.

Notes

The recipe gives a 2–3 lb sweet potato range and does not specify an amount for the optional oil used on the skins, the optional extra brown sugar, or the oil/butter used to grease the dish. Alternative method for cooking the potatoes is included in the source.
