Ingredients

  • 360 g Duke's mayonnaise (Tangy mayonnaise; the author prefers Duke's.)
  • 120 g Apple cider vinegar
  • 60 g Apple juice
  • 20 g Prepared horseradish
  • 15 g Fresh lemon juice
  • 6 g Coarse black pepper (Use plenty; the sauce is meant to be peppery.)
  • 1 g Cayenne pepper
  • 5 g Fine salt

Steps

  1. 1

Add the prepared horseradish to a bowl.

  2. 2

Add the Duke's mayonnaise, apple cider vinegar, and apple juice.

  3. 3

Add the fresh lemon juice, cayenne pepper, coarse black pepper, and fine salt.

  4. 4

    Whisk until smooth.

  5. 5

Refrigerate for at least 30 minutes before using, allowing the black pepper and horseradish to bloom. Use for dipping or coating barbecue chicken; keep it thinner than a sandwich sauce.

Notes

Yield: about 560 g (2 1/3 cups). The author recommends plenty of black pepper; the sauce is intended to have a noticeable bite.
