Banana Split Bark
A refreshing frozen snack featuring smushed bananas layered with creamy vanilla Greek yogurt, fresh strawberries, and a crunchy dark chocolate shell with peanuts and sprinkles.

Ingredients
- 3 bananas (very ripe)
- 1 cup vanilla Greek yogurt (higher fat yogurt recommended for a less icy texture)
- 0.5 cup strawberries (sliced)
- 4 oz dark chocolate (melted)
- 2 tbsp peanuts (chopped)
- 1 tbsp sprinkles (for topping)

Line a quarter sheet pan with parchment paper to prevent sticking.

Place 3 very ripe bananas on the parchment paper. Place a second quarter sheet pan on top and press down firmly to smush the bananas into a flat, even layer.

Remove the top sheet pan and spread a layer of vanilla Greek yogurt evenly over the smushed bananas.

Arrange a layer of sliced strawberries on top of the yogurt.

Place the pan in the freezer and freeze until solid, which typically takes a few hours.

Once the base is solid, melt the dark chocolate and spread it quickly over the frozen strawberry and yogurt layer.

Immediately top the wet chocolate with chopped peanuts and sprinkles; the chocolate will set very quickly due to the frozen base.

Return to the freezer for a few minutes if needed to let the chocolate fully set. Chop the bark into bite-sized pieces and serve immediately.
Notes
Store the bark in a sealed container in the freezer. Using a higher fat Greek yogurt results in a creamier, less icy texture. Depending on the ripeness of the bananas, you may need to let the bark set slightly longer in the freezer.
