Roasted Strawberry Dutch Baby Pancake

- 0.5 cup all purpose flour
- 0.5 cup milk (room temperature; can use nondairy)
- 2 eggs (room temperature)
- 2 tbsp granulated sugar
- 0.5 tsp vanilla extract
- 1 tsp lemon zest (for the batter)
- 0.25 tsp salt
- 2 tbsp butter (can use nondairy)
- 1 pint strawberries (quartered, approximately 2 cups)
- 1 tsp lemon zest (for the strawberries)
- 2 tbsp sugar (for the strawberries)
- maple syrup (for serving)
- powdered sugar (for serving)

Preheat your oven to 425°F (220°C).

Place a 9-inch oven-safe skillet (preferably cast iron) in the oven while it preheats to ensure it is hot when the batter is added.

In a blender, combine the flour, milk, eggs, 2 tablespoons granulated sugar, vanilla extract, 1 teaspoon lemon zest, and salt. Blend until the batter is completely smooth.

Let the batter sit for 10 to 20 minutes while the oven finishes heating. This allows the flour to hydrate.

In a small bowl, toss together the quartered strawberries, 1 teaspoon lemon zest, and 2 tablespoons sugar. Transfer the mixture to a sheet pan.

Once the oven is fully heated, carefully remove the hot skillet. Add the butter to the pan and swirl it around until it is completely melted and coating the bottom.

Immediately pour the pancake batter into the center of the hot, buttered skillet.

Place the skillet with the pancake and the sheet pan with the strawberries into the oven.

Bake for 15 to 20 minutes. The pancake edges should be puffy and golden brown, and the strawberries should be jammy and softened.

Remove from the oven. Top the Dutch baby with the roasted strawberries and serve warm with maple syrup and a dusting of powdered sugar.
Notes
It is essential to preheat the pan in the oven before adding the butter to achieve the perfect rise and crisp edges. This recipe also works beautifully with peaches instead of strawberries.
