A quick, hearty one-pan pasta dinner made with browned kielbasa, rotini, tomato sauce, beef broth, and melted Colby Jack cheese. Cayenne adds a mild kick, but it can be omitted for a milder dish.

Ingredients

  • 14 oz Kielbasa (Sliced)
  • 1 Onion (Chopped)
  • 0.5 tsp Black pepper
  • 0.25 tsp Cayenne pepper (Omit for a milder dish)
  • 1 tsp Paprika
  • 1 tsp Dried oregano
  • 1 tsp Onion powder
  • 1 tbsp Garlic (Minced)
  • 3 cups Rotini pasta (Uncooked)
  • 3 cups Beef broth
  • 8 oz Tomato sauce (One can)
  • 8 oz Colby Jack cheese (Shredded from a block)
  • 0.333 cup Milk (Add a splash when stirring in the cheese)
  • Dried parsley (For topping, to taste)

Steps

    Heat a large, deep skillet over medium-high heat. Add the sliced kielbasa and chopped onion, then cook until the sausage is browned and the onion has softened, about 5–7 minutes.

    Add the minced garlic and cook for about 30 seconds, stirring, until fragrant.

    Add the uncooked rotini, beef broth, and tomato sauce to the skillet.

    Add the black pepper, cayenne pepper, paprika, oregano, and onion powder. Stir thoroughly so the pasta is coated and the seasonings are distributed.

    Bring the mixture to a quick boil. Make sure the skillet is actively bubbling before reducing the heat.

    Reduce the heat to medium-low, cover the skillet, and cook for 12–15 minutes, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed.

    Remove the lid and add the shredded Colby Jack cheese and milk. Stir until the cheese is melted and the sauce is creamy. If needed, keep the skillet over low heat briefly to help the cheese melt without scorching.

    Top with dried parsley and serve hot.

Notes

The cayenne pepper provides a little heat and may be left out. Stir occasionally while the pasta cooks to prevent sticking and check the pasta near the 12-minute mark, since cooking time can vary by skillet and pasta shape.
