Ingredients
- 800 g Lean ground beef
- 2 tsp Smoked paprika
- 2 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Cayenne pepper
- 1 tsp Ground cumin
- 1 tsp Dried oregano
- 2 tsp Sea salt
- 1 tsp Black pepper
- 10 Eggs (Beaten)
- Salt (To taste)
- 20 slices Light cheese slices (2 slices per roll; Tesco brand specified)
- 10 Low-calorie tortillas (Mission Carb Balance brand specified; warm before filling)
- 25 g Low-fat grated cheese (25 g per roll; source says 50% less fat)
- Parsley (Chopped, for garnish)
- Cooking spray (For the pan and to spray the assembled rolls)
- 300 g Enchilada sauce
Steps
- 1
Heat a pan and coat it with cooking spray. Add the lean ground beef and let it sear until browned and crisped.
- 2
Add the smoked paprika, garlic powder, onion powder, cayenne, cumin, oregano, sea salt, and black pepper to the beef. Add the enchilada sauce and mix to coat the beef evenly.
- 3
In the same pan, add the beaten eggs. Scramble over medium heat, stirring every 20 seconds, until very fluffy.
- 4
Season the scrambled eggs with salt to taste.
- 5
Warm a tortilla. Lay 2 light cheese slices on it, then add one-tenth of the scrambled eggs, one-tenth of the taco beef, and 25 g of low-fat grated cheese.
- 6
Fold in the sides of the tortilla and roll it tightly. Repeat with the remaining ingredients to make 10 rolls.
- 7
Spray the rolls with cooking spray and sprinkle with chopped parsley.
- 8
Bake at 200°C for 8–10 minutes, or air-fry at 180°C for 6–8 minutes.
- 9
Wrap the rolls in foil and store them in the freezer.
- 10
To reheat, unwrap a frozen roll from the foil and wrap it in a paper towel. Run it under water, then squeeze out the excess water. Microwave for 5–6 minutes. Carefully unwrap it and air-fry or toast it in a pan for a couple of minutes, until crispy.
Notes
The video frames specify 300 g enchilada sauce, although the description does not list it; the spoken transcript also names it. Reheating time and crisping method are from the description. The source does not specify the quantity of parsley or cooking spray.
