Ingredients
- 1 lb chicken breast (Cut into small cubes)
- 2 tbsp butter
- 1 onion (Chopped)
- 0.5 tsp salt
- 0.5 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1 tsp Italian seasoning
- 1 tbsp minced garlic
- 2.5 tbsp Parmesan garlic sauce (Source specifies 2–3 tbsp)
- 1 cup white jasmine rice (Rinsed)
- 2 cup chicken broth
- 1.5 cup shredded mozzarella cheese (About 1 cup is stirred into the rice; the remainder is used for topping)
- 2 oz cream cheese
- 4 bacon (Cooked and crumbled; bacon bits may be used instead)
- dried parsley (For topping)
Steps
- 1
If using uncooked bacon, cook it, drain the grease, and chop it into small pieces. Bacon bits may be used instead. Set aside the cooked, crumbled bacon.
- 2
Cut the chicken breast into small cubes.
- 3
Melt the butter in a skillet over medium-high heat.
- 4
Add the chicken to the skillet and spread it out evenly.
- 5
Add the chopped onion, salt, black pepper, smoked paprika, onion powder, and Italian seasoning. Cook until the chicken is almost cooked through and the onion has softened.
- 6
Add the minced garlic and 2–3 tablespoons of Parmesan garlic sauce. Stir to coat the chicken.
- 7
Add the rinsed jasmine rice to the center of the skillet and let it toast for a couple of minutes.
- 8
Pour in the chicken broth and stir well.
- 9
Bring the mixture to a boil, then reduce the heat to medium-low and cover the skillet with a lid.
- 10
Cook, covered, for about 15–20 minutes, or until the rice is cooked. The transcript specifies approximately 18 minutes.
- 11
Add about 1 cup of the shredded mozzarella and the cream cheese. Stir well until incorporated.
- 12
Top with the remaining shredded mozzarella and the crumbled bacon.
- 13
Cover the skillet until the cheese melts, or place it under the broiler for a few minutes to melt the topping.
- 14
Top with dried parsley and serve.
Notes
The source does not specify a broiler temperature or exact broiling time; it only says to broil for a few minutes. Use a broiler-safe skillet if choosing that option. Bacon may be prepared ahead or replaced with bacon bits.
