Crispy Potato Waffle with Avocado and Egg

- 1 cooked medium potato (Cooked and lightly mashed or grated before placing it in the waffle maker.)
- 0.25 cup grated cheese (Parmesan or cheddar; use enough to cover and bind the potato.)
- 0.5 ripe avocado (Sliced or mashed to place on top of the waffle.)
- salt (To taste.)
- black pepper (To taste.)
- 1 large egg (Cook until the white is firm and the yolk remains runny, if desired.)
- 1 tsp butter or olive oil (For frying the egg.)
- everything bagel seasoning (Optional, for finishing.)
- crispy chili or chili flakes (Optional, to taste.)
- chopped chives or green onions (Optional, for garnishing.)
- honey (Optional, for drizzling at the end.)

Preheat a waffle maker to medium-high heat. Lightly grease the plates if necessary to prevent the cheese from sticking.

Place the cooked potato in the waffle maker and spread it into an even layer. Add the grated cheese on top and close the waffle maker.

Cook for approximately 5 to 8 minutes, until the potato and cheese are deeply golden, crispy around the edges, and firm when the lid is lifted. The cooking time may vary depending on the waffle maker.

While the waffle cooks, heat the butter or olive oil in a small skillet over medium heat.

Crack the egg into the skillet and fry until the white is fully set and the yolk is still runny, approximately 3 to 4 minutes. Season with salt and pepper to taste.

Carefully remove the potato and cheese waffle and place it on a plate. Top with the ripe avocado.
